Sara's Pork Barbacoa Burritos

Don't ask me who Sara is. I have no idea. All I know is I found this recipe from this website and I am excited to give it a try: http://bonsfavoriterecipes.blogspot.com.

6 Pounds Pork Roast (Cheap Roast Works Just Fine)
16 Oz. Bottle Salsa
1 Can of Coke (Regular Not Diet)
2 Cups Brown Sugar

Place pork roast in crockpot and fill half way up with water. Cook on high for 5 hours. Drain off water and cut pork roast into thirds. Mix together sauce ingredients and put on top of pork. Cook an additional 3 hours on high. Shred pork with forks. Place meat back in the crockpot and leave it on low until ready to serve.

Serve with flour tortillas, lettuce, cheese, cilantro-lime rice, lettuce, cheese, and all your favorite trimmings.

Cilantro-Lime Rice
1 Pound or 2 1/4 Cups Long Grain Rice
1 Bunch Cilantro
Juice of Two Limes
4 Cloves of Garlic
2 Tablespoons Oil

Chop garlic and cilantro. Heat oil in a skillet. Add rice and all chopped ingredients. Saute 3-5 minutes stirring frequently. Put 4 cups of water and lime juice in a rice cooker. Add rice mixture to the rice cooker. Cook according to the cooker's directions. If you do not have a rice cooker, combine rice mixture, water and lime juice in a 3-quart pot and bring to a boil. Reduce heat and simmer until all the liquid is absorbed, about 25 minutes.
